Install Packages with Update Kickstart

The documentation states that installing packages in 'update' mode is
not supported using the %packages section of the ks.cfg file. I would
like to know if it is possible to install additional packages via
Kickstart in 'update' mode (perhaps maybe using a post-install script),
and if so how would it be accomplished.
