I can't help you with these network quirks, but you can see more of the ps output (I agree it's a PITA) with two workarounds... One: if you're doing the ps list in an X display window (xterm, etc.), try dragging/stretching/expanding the window size horizontally to maximize the width of the list. Two: redirect the ps list into a file (ps auxf > whatever.txt) and examine it post facto.
