Default NFS and ownership

In putting Linux on all the machines in the house and completely ousting
Windows (yay!) I've had the opportunity to map an NFS networking system
to replace Samba. I like the way it works, there's some serious power
here.

What I need to do, but dont know how yet, is to match uid and gid on and
export to the user on my desktop system so I can access it fully. Is
this set in fstab or exports? The man pages seem a bit unclear on this
to me.
